With Spelunkery installed, its Spring Water is always Pure, and only sea water boils down to salt in a furnace.
Supported versions
Fabric and NeoForge, Minecraft 1.21.1, with
Spelunkery 1.21.1-0.4.4, which needs Moonlight Lib. Its 1.20.1 version is no longer updated and is not supported.
Spring Water

Spring Water pools in caves under mountains, glowing faintly. A bottle, bowl or waterskin filled from it, or a sip straight from it, is always Pure, wherever the spring is. There is no need to boil it.
A bucket of Spring Water is Spelunkery's own fluid. It can be poured out again, but it is not a drink.
Boiling water into salt
Spelunkery boils a water bucket into a Salt Bucket in a furnace. With this mod, that only works with sea water: boiling it away leaves its salt behind. A bucket of Dirty or Murky fresh water is boiled Clean in the furnace as usual, and better water stays as it is.
Salt is also mined from rock salt, so it is still easy to get when sea water is turned off with enableSeaWater.
